With a glut of rather large courgette on my hands, I’ve been trying to get creative with my cooking as there’s only so much roasted/griddled/fried courgette a girl can eat. With all the hot weather recently, salads have been a winner; and this courgette ceviche was no exception. It’s so simple to prepare, no cooking required and maximum taste achieved: perfection!
All you need to do is make your ceviche liquor (as I like to call it) in a jar. I finely diced half a red onion and mixed this with lots of lime or lemon juice, fresh coriander, chilli, garlic, raspberry vinegar, salt, pepper and a bit of honey (make sure you taste as you go, you can always add more chilli etc when serving). Then thinly slice your courgette and arrange on a nice serving plate, pour the liquor over the top and leave to work its magic in the fridge for as long as you can (I left it for 4 hours initially, but it tasted nicer the next day!).
Serve simply with some crumbled feta over the top for a lovely light lunch. I think this would also be delicious with roast chicken. Let me know if you try it!
